Le Cordon Bleu Patisserie and Baking Program
The Le Cordon Bleu Patisserie and Baking Program is designed to
provide the culinary arts student with a strong baking foundation,
pastry techniques, and the practical skills necessary to succeed
in the food service industry. Before earning their culinary degrees,
graduates should acquire proficiency in both front and back of the
house operations, as well as in the culinary techniques and principles
of food service management. This program can prepare students for
culinary degrees and entry-level positions as bakers and pastry
chef trainees.

Program
In order to meet the demand for qualified hospitality professionals,
culinary school offers an Associates of Applied Science in Le Cordon
Bleu Hospitality & Restaurant Management. This comprehensive
program can prepare students for entry-level employment of restaurant
management. We teach all aspects of managing restaurant facilities
by including instruction in both the front & back of the house
(kitchen and the dining room). This program is designed to demonstrate
our practical, hands-on approach to culinary education that focuses

The Associate of Applied Science Degree in Le Cordon Bleu Culinary
Arts is designed to provide the theoretical foundation and technical
skills necessary for success in the food service industry. It has
been developed in response to student interest and industry demands.
This culinary arts program is aimed to give students the background
and expertise necessary to enter the food service industry in entry
to mid-level positions, and to advance through a variety of related
positions.
Le Cordon Bleu's partnership with the culinary school combines
classical French cooking techniques with modern American technology.
Students will be required to demonstrate culinary proficiencies
at every level of their program. It combines classical methodology
with a contemporary philosophy and includes over 450 specific proficiencies.
Students will be exposed to a cross-cultural spirit and international
culinary techniques, which focus on demonstration followed by practical
application. The Le Cordon Bleu Dîplome has worldwide recognition
and local appeal.
As part of the culinary arts program, students can learn classical
French cooking methods and the qualitative aspects of food preparation,
including nutrition and sanitation. Laboratory sessions enable students
to achieve proficiency by meeting the rigorous standards established
by the curriculum and defined by experienced chef instructors. Students
progress to preparing food in quantity, and become involved in both
the front and back of the house operations in our on-site restaurant.
Emphasis is placed on timeliness, procedure, and organizational
techniques, as well as on product quality.
Students can also learn about restaurant operations from a corporate
level and then break down the various components to study in detail
how they can be applied to any food service establishment. Students
can learn management theory and develop an understanding of effective
leadership and how it can influence their environment.
Our programs include a general education component that can provide
solid academic foundation for our student’s career and personal
growth.
The program represents a complete, well-rounded curriculum that
provides a foundation for students to enter the food service industry
in any of a multitude of positions. The program is designed to be
15 months in length - 12 months on campus followed by a 3 month
externship where students apply their newly acquired skills in the
"real" world. Graduates should be prepared to assume entry
to mid-level positions such as cook, apprentice chef, or caterer
in settings such as restaurants, hotels, schools, bakeries, resorts,
and cruise ships.

Orlando Culinary Academy is prepared to provide you with everything that you
will need to launch your career in the food service industry in as few as 15
months. All applicants are required to complete a personal interview with an
admissions representative. Prospective students residing outside the region
may submit a request for a telephone interview. Prospective students must have
earned a high school diploma or its equivalent. Once an applicant has completed
and submitted the Enrollment Agreement, the school reviews the information and
informs the applicant of its decision. If an applicant is not accepted, all
fees paid to the school are refunded
